Sauteed garden peas can create a light, buttery, fresh, healthy side dish. It is quick and easy to prepare
4 cups of Tante's garden peas
4 large shallots, peeled, halved, and cut into 1/4 inch slices
1 clove garlic, finely minced
1 tablespoon butter
1 teaspoon olive oil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons fresh parsley, finely chopped (plus more for garnish)
In a skillet over medium heat, add the olive oil, butter, and shallots. Sautee the shallots until softened and lightly browned - about 5-7 minutes.
Add the garlic and continue to cook for 2 minutes.
Next, add the green peas, salt, and ground black pepper. Stir into the shallots and garlic. Cook for 3-5 minutes or until the peas are heated all the way through.
Turn off heat. Add parsley and stir into the Tante's garden peas.
Plate, garnish, and serve immediately.
