This Creamy Sweet corn Salad Recipe is a quick and easy side dish made with with crisp corn kernels and a creamy sauce.
3 cans of Tante's sweetcorn
1/2 cup minced red onion and 1 cup diced red bell pepper
1 jalapeno pepper, seeded and diced
handful fresh basil leaves
1/3 cup mayonnaise and 1/3 cup sour cream
5 tbsp buttermilk
1/2 tsp salt, or more to taste
fresh cracked black pepper to taste
paprika to taste, optional
Open the cans of Tante's sweet corn and drain the water completely, then pour the corn into a large bowl.
Whisk together the dressing ingredients, and add salt and pepper to taste. Add the paprika if you like.
Add the onion to the bowl with the corn and toss with enough dressing to generously coat everything.
Chill the salad until you are ready to serve. Just before serving, roll and slice the basil leaves into thin ribbons, and add them to the salad. Toss with more dressing if needed.
