5 ounces RCKT ginger beer
1/4 cup loosely packed mint leaves
1 teaspoon finely chopped fresh ginger
3/4 once lime juice
1.5 ounce cinnamon simple syrup
3 ounces pineapple juice
Muddle ginger, mint and lime juice in a cocktail shaker.
Add pineapple and cinnamon simple syrup.
Shake with ice until cold, about 30 seconds.
Double strain, by pouring the mocktail through the shaker and then through a fine mesh strainer directly into two glasses filled with ice.
Top with RCKT ginger beer, stir to combine. If needed top with more ice and serve!
