PENNE WITH VODKA SAUCE

This recipe features tender penne pasta cooked in a rich sauce containing tomato, vodka and cream sauce. This recipe can be made into a restaurant style dish by sprinkling a healthy serving of parmesan cheese. This dish can also have grilled chicken or grilled shrimp for extra protein.

Ingredients

  • 1 lb. Tante's penne pasta

  • 4 slices bacon

  • 3 cloves garlic minced

  • 1/4 cup vodka

  • 1 cup tomato puree

  • 3/4 cup heavy cream

  • 1/2 cup parmesan cheese

  • Salt and pepper to taste

  • 2 tbspn chopped parsley

Method

Step 1

Boil the water and cook the Tante's pasta until just underdone. Reserve some of the pasta water and drain.

Step 2

Meanwhile, cut the bacon into one-inch strips. Place into a thin layer in a large pan and heat to medium-high. Cook until brown and crispy.

Step 3

Remove any excess grease from the pan (leaving about a teaspoon). Add the garlic and cook until fragrant (about another minute).

Step 4

Raise the heat to high, add the vodka to the pan and cook until some of the alcohol has cooked off (3-4 minutes).

Step 5

Add the tomato puree and stir until combined. Lower the heat to low and Let simmer for another 5 minutes.

Step 6

Stir in the cream, Tante's penne pasta, parmesan cheese, parsley, and cooked penne. Cook until the pasta is fully cooked. Adding reserved pasta water if the sauce is too thick.

Step 7

Taste for seasoning and add salt and pepper as needed.

Step 8

Sprinkle with parsley, parmesan cheese and red pepper flakes (optional), then serve.
